Hello all you gardeners!
We were away for 10 days; came back to find my peas
8 ft tall and out of control (admittedly, I planted too many). The pea pods are yummy but I remembered also eating the vines in the past. I went on line to find recipes for the pea vines and combined two or three. We tried it out on friends last night and it was a hit. Here's the recipe.
Stir-Fried Pea Vines and pea pods
1 Tbls vegetable oil
1 tsp toasted sesame oil + a few drops
1 Tbls fresh ginger, minced
2+garlic cloves, finely minced
1/2 tsp sugar
1 1/2 lbs young pea vines, loosely packed (very rough estimate)
1 cup pea pods, cut on the diagonal into thirds
1 tsp soy sauce
2 Tbls oyster sauce
1-2 Tbls toasted sesame seeds

Pea vines (or pea shoots) are the tips of the vines and the top set of leaves of the pea plant. Remove any stems that look coarse. Prepare the pea vines by rinsing in cold water and patting dry with paper towels (or soft cotton towel). Keep cold in the refrigerator.
In a large wok or skillet over high heat, heat oils; add ginger, garlice and sugar. Toss for 1-2 minutes, add shoots and pea pods, and stir fry for 2-3 minutes or until the leaves soften and are tender. Add oyster sauce, soy sauce and sesame seeds. Mix. Add a few drops of toasted sesame oil at the end.
ENJOY!
Sooz Appel
P.S. I hope we'll share recipes with other for the bounty we'll be receiving this summer from our gardens.
